• 12cl milk
• 60g flour
• 1 hazelnut of Bordier Butter & Caviar
• 30g grated Gruyère cheese
• 2 tablespoons oil
• Slices of smoked salmon
• Sprigs of chives

Peel, wash and grate the potatoes. In a bowl, whisk the egg yolk with the milk, stir in the flour, Gruyère and oil, then add the grated potatoes and mix well.
Cook the waffles for around 7 minutes in a pre-heated, oiled waffle iron. Place a dab of Beurre Bordier & Caviar on the waffles. It will melt on contact with the heat. Serve with thin slices of smoked salmon.
