• 3 eggs
• 120g of sugar
• 1/2 lemon (zest and juice)
• 45g of wheat flour
• 125g toasted and crushed gingerbread
• 60g of Bordier Semi-Salted Butter

• 400g of Bordier white cheese
• 3 eggs
• 120g of sugar
• 1/2 lemon (zest and juice)

• 60g of Bordier Semi-Salted Butter
• 24cm diameter springform pan
Melt the butter. Add the crushed gingerbread. Line the bottom of a mold (24cm in diameter) with the previous preparation. Cook for 12 minutes at 160°C. Let cool.
Mix the fromage blanc, eggs, sugar, lemon and flour in a salad bowl. Pour this mixture into the mold.
Bake at 90°C for 90 minutes. Let cool. Unmold onto a dish or display. Accompany the cheesecake with whipped cream, some seasonal fruits and broken gingerbread.
